Anthocyanins are the polyphenols found in the red pigments of fruits and vegetables. They are the most important pigments visible to the human eye and have been shown to be the most powerful antioxidants which are beneficial to our health. Free radicals are unstable oxygen molecules that get into or are created in the body as a result of over-exercise, stress, being exposed to dirty air and other environmental pollutants.
